This coffee is the result of a direct-trade relationship with farmer Diego Chavarria in the Matagalpa region—a story so compelling it inspired the documentary Café Diego: The Cost of a Dream.
Historically, Matagalpa has been the "Coffee Capital" of Nicaragua since the mid-19th century. The region's high altitude and old shade canopy create a microclimate that slows bean maturation. This slow growth is exactly what develops the dense cellular structure we look for in a specialty-grade Strictly High Grown (SHG) bean.
Café Diego is a direct trade coffee with a creamy body; clean, sweet, citric acidity and a caramel sweetness; smooth and aromatic.
